The best possible fillet for filleting small fish. There have been several different brands and models. They don't use these in professional kitchens for nothing. Flexible blade, easy to sharpen, very grippy handle, although they are not eternal fillets, because due to the softness of the blade it requires a fair amount of sharpening and maintenance. On the other hand, it can be easily made very sharp.
