Tute is high quality in all respects and always values craftsmanship. But I think the knife is more of a "meat ax" than a chef's knife. The blade is quite thick and thus, for example, the thinning of the roots is better with a thinner-blade knife. Dicing the meat and the knife works well with the corresponding "softer" ingredients. Personally, however, I would have been happier with a thinner-edged product.
